Specializing in Healthy School Lunches & Corporate Events Catering. Responsibilities: Responsibilities will include, but are not limited to: 1. Establishes a culture of respect, hard work, consistency and effective communication in the kitchen. 2. Maintains food production costs and price, portion, and quality assurance and control methods in a large food production operation. 3. Oversees and/or participates in menu planning. Including use of menu planning and nutritional software. 4. Supervise the procedures for ordering, receiving, storing, and packaging meals and foods items in large quantities. 5. Maintain staff resource planning for A.M. and P.M. production lines as needed. 6. Oversees and participates in the preparation and serving of food. 7. Adhere to the Federal, State, and District rules and regulations pertaining to school meals and child nutrition. 8. Maintains the highest levels of food safety, sanitation and cleanliness in all production areas 9. Oversees the use and care of equipment used in large-scale food operations. 10. Supervises the health, sanitation, and safety regulations pertaining to the handling and storage of foods and the operation of food processing facilities and equipment. 11. Develops and maintains accurate records, make mathematical computations, and prepare production reports 12. Establish and maintain effective working relationships with kitchen employees. 13. Manage companies “Green” waste, compost and recycling program as directed. 14. Responsible for the hands on production duties as needed/required. Ability to use nutrition software. 15. Participates in hiring, staff training and development, and the supervision of the production staff. 16. Oversee all employee injuries while on duty. Utilize accident reporting. 17. Take part in all disciplinary action for hourly kitchen employees as directed by the Production Manager. 18. Monitors cleanliness of all area’s in the kitchen environment, HACCP compliance. 19. Complies with all state of Illinois, Indiana & Wisconsin Health and Safety codes. 20. Performs other duties, as assigned, and follows through on requests in a timely manner. 21. Responds to customer preferences and industry trends to plan menus that encourage participation in the food programs. 22. Ability to manage multiple production locations.
Requirements:
1. 2-6 years culinary experience in a busy foodservice environment. 2. Hands on production supervisor experience working in a high volume, high end food production. 3. Specialized training in foodservice management and nutrition is desirable 4. Proven supervisor experience including training and development of team. 5. Able to lift 50 pounds and physically perform requirements of job. 6. Advanced knowledge of safe and proper knife and kitchen utensil use. 7. Strong communication and interpersonal skills: both orally and in writing 8. Able to work well with others and participate as part of a team. 9. Able to multi-task in a professional, respectful manner with keen attention to detail. 10. Committed to the mission that all children will have access to nutritious, tasty food to support the development of healthy minds and bodies while supporting the local sustainable food community. 11. Bi-lingual a plus but not required. Ability to read, write and speak English is required. 12. Drivers License required. 13. Safe Serve Sanitation License Required.
